Ingredients

  • Peanut Butter
  • Canned Tomatoes
  • Sweet Potatoes
  • Vegetable Broth
  • Onion
  • Garlic Cloves
  • Ground Cumin
  • Ground Coriander
  • Spinach or Kale
  • Chili Pepper (optional)

Instructions

  1. Chop onions and mince garlic. Heat olive oil in a large pot over medium heat.
  2. Sauté onions until translucent (about 5-7 minutes), then add minced garlic for 1 minute.
  3. Stir in chopped sweet potatoes and canned tomatoes; cook for 3-4 minutes to combine flavors.
  4. Add vegetable broth and peanut butter; stir until smooth. Simmer for 10 minutes until sweet potatoes are tender.
  5. Mix in spinach or kale along with cumin and coriander; let wilt for another 5 minutes.
  6. Taste and adjust seasoning with salt or chili pepper as desired.
