Description

Artichokes on Whipped Ricotta with Herb Gremolata is a vibrant dish that combines tender artichokes atop creamy whipped ricotta, finished with zesty gremolata, perfect for any gathering or cozy night in.


Ingredients

  • 4 fresh globe artichokes
  • 1 cup high-quality ricotta cheese
  • 2 tbsp extra-virgin olive oil (divided)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Trim the stems of the artichokes and remove tough outer leaves until you reach the tender ones.
  2. Steam artichokes over boiling water for 25-30 minutes until easily pierced with a knife.
  3. In a bowl, combine ricotta, 1 tbsp olive oil, and salt; whip until smooth and creamy.
  4. In a separate bowl, mix parsley, basil, lemon zest, remaining olive oil, salt, and pepper to create gremolata.
  5. Spread whipped ricotta on plates or a platter; top each with steamed artichokes and garnish with gremolata.
