Instructions
- Trim the stems of the artichokes and remove tough outer leaves until you reach the tender ones.
- Steam artichokes over boiling water for 25-30 minutes until easily pierced with a knife.
- In a bowl, combine ricotta, 1 tbsp olive oil, and salt; whip until smooth and creamy.
- In a separate bowl, mix parsley, basil, lemon zest, remaining olive oil, salt, and pepper to create gremolata.
- Spread whipped ricotta on plates or a platter; top each with steamed artichokes and garnish with gremolata.
