Ingredients

  • Fresh asparagus
  • Crisp radishes
  • Capers
  • Extra virgin olive oil

  • Dijon mustard

Instructions

  1. Rinse asparagus and snap off tough ends; slice radishes thinly.
  2. Blanch asparagus in boiling salted water for 3 minutes; quickly transfer to ice water.
  3. Whisk olive oil, lemon juice, Dijon mustard, salt, and pepper in a bowl; add rinsed capers.
  4. In a large bowl, combine blanched asparagus and sliced radishes. Drizzle with vinaigrette and toss gently.
  5. Serve immediately or chill for up to an hour before serving.
