- 4 large bell peppers (any color)
- 2 cups shredded rotisserie chicken
- 1/2 cup buffalo sauce
- 4 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped green onions
- Salt, pepper, and garlic powder to taste
Instructions
- Preheat oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove seeds.
- In a bowl, mix shredded chicken, cream cheese, buffalo sauce, half of the mozzarella cheese, salt, pepper, and garlic powder until well combined.
- Stuff each pepper with the chicken mixture until slightly overflowing.
- Place stuffed peppers in a baking dish and sprinkle remaining mozzarella on top.
- Bake for 25 minutes, until cheese is melted and bubbly.
- Garnish with chopped green onions before serving.
