- 8 oz burrata cheese
- 2 cups cherry tomatoes
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh basil leaves
- 1 tbsp aged balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Spread cherry tomatoes on the baking sheet, drizzle with olive oil, and sprinkle with salt.
- Roast for about 20 minutes until the tomatoes are blistered and fragrant.
- While roasting, tear basil leaves into small pieces.
- In a mixing bowl, combine roasted tomatoes and torn basil. Gently fold in the burrata cheese.
