Indulge in this vibrant salad combining creamy burrata and sweet roasted tomatoes for a refreshing dish that delights the senses.


Ingredients

  • 8 oz burrata cheese
  • 2 cups cherry tomatoes
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil leaves
  • 1 tbsp aged balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Spread cherry tomatoes on the baking sheet, drizzle with olive oil, and sprinkle with salt.
  3. Roast for about 20 minutes until the tomatoes are blistered and fragrant.
  4. While roasting, tear basil leaves into small pieces.
  5. In a mixing bowl, combine roasted tomatoes and torn basil. Gently fold in the burrata cheese.
  6. Drizzle with balsamic vinegar, season with salt and pepper, and serve warm.
