Instructions

  1. Prep the veggies: Peel and dice the potatoes, chop the onion, and mince the garlic.
  2. Sauté aromatics: In a pot over medium heat, add olive oil. Sauté onion until translucent (5-7 minutes); then add garlic and cook until fragrant.
