  • 2 tbsp red curry paste
  • 1 cup vegetable broth
  • 1 cup bell peppers (sliced)
  • 1 cup carrots (sliced)
  • 1 cup snap peas
  • 2 cloves garlic (minced)
  • 1 tsp fresh ginger (grated)
  • Juice of 1 lime
  • Fresh cilantro (for garnish)

Instructions

  1. 1. Prep your ingredients: Chop vegetables into bite-sized pieces.
  2. 2. Sauté aromatics: In a large pot over medium heat, heat 1 tbsp oil and add minced garlic and grated ginger until fragrant, about 1 minute.
  3. 3. Add vegetables & curry paste: Stir in chopped vegetables and red curry paste, cooking until veggies soften, around 3-4 minutes.
  4. 4. Pour in coconut milk & simmer: Add coconut milk and vegetable broth; bring to a simmer for creamy goodness.
  5. 5. Add shrimp & cook until pink: Gently stir in shrimp; cook for 3-5 minutes until shrimp turns pink and opaque.
  6. 6. Finish with lime juice & herbs: Remove from heat, stir in lime juice, garnish with cilantro, and serve.
