Description

  • 2 cups fresh broccoli florets
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup seasoned breadcrumbs
  • 2 large eggs (room temperature)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Steam broccoli florets for 5-7 minutes until tender but bright green. Let cool then finely chop.
  2. In a large bowl, combine chopped broccoli, cheddar cheese, and breadcrumbs until evenly mixed.
  3. Add eggs, garlic powder, salt, and pepper. Stir until well combined; mixture should be sticky but manageable.
  4. With wet hands, scoop out small portions and roll into balls about 1 inch in diameter. Place on a lined baking sheet.
  5. Preheat oven to 400°F (200°C) and bake for 15-20 minutes until golden brown and crispy.
  6. Allow to cool slightly before serving with your favorite dipping sauce.
