- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3 large eggs
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon pure vanilla extract
- 2 cups mini marshmallows
- 1 cup sweetened shredded coconut
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
- In a large bowl, whisk melted butter, granulated sugar, and brown sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Sift in cocoa powder and flour along with vanilla extract; stir until just combined.
- Pour the batter into the prepared pan and bake for 20-25 minutes until a toothpick comes out clean but slightly moist.
- Remove from the oven and evenly sprinkle mini marshmallows on top. Return to the oven for an additional 5 minutes or until marshmallows are puffed.
- After removing from the oven, sprinkle shredded coconut over the warm marshmallows. Allow cooling completely before dusting with powdered sugar.
