Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 cup asparagus spears
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 3 tbsp garlic butter (softened)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lay out a large piece of aluminum foil on a baking sheet to create a pocket.
  3. Place salmon fillets skin-side down on the foil. Drizzle with olive oil, season with salt and pepper, and spread half of the garlic butter over them.
  4. Arrange asparagus around the salmon; drizzle with remaining olive oil and season lightly.
  5. Squeeze fresh lemon juice over both salmon and asparagus.
  6. Fold the edges of the foil tightly to seal the packet.
  7. Bake for 15-20 minutes until the salmon flakes easily with a fork and is pinkish-orange in color.
  8. Carefully unwrap the foil packet, drizzle any remaining garlic butter sauce over everything, and garnish with chopped parsley before serving.
