- 3 cups boneless skinless chicken breasts, diced
- 2 medium carrots, diced
- 1 cup frozen peas
- 2 medium Yukon Gold potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 2 store-bought pie crusts (thawed)
- 1 tsp dried thyme
- 1 tbsp fresh parsley (or 1 tsp dried)
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a large skillet over medium heat, melt butter and sauté onions and carrots until softened.
- Add diced chicken and season with salt, pepper, thyme, and parsley. Cook until chicken is no longer pink (about 5-7 minutes).
- Stir in chicken broth and cream; let it bubble before adding peas and potatoes. Mix well.
- Place one pie crust in a 9-inch pie plate and fill it with the chicken mixture.
- Cover with the second pie crust, sealing edges and cutting slits for steam to escape.
- Bake for 30-35 minutes or until golden brown. Cool slightly before serving.
