Description

Cozy Chicken Pot Pie is a heartwarming dish filled with tender chicken, vibrant vegetables, and a creamy sauce, all wrapped in a flaky crust—ideal for family dinners or chilly nights.

  • 3 cups boneless skinless chicken breasts, diced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 medium Yukon Gold potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 store-bought pie crusts (thawed)
  • 1 tsp dried thyme
  • 1 tbsp fresh parsley (or 1 tsp dried)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large skillet over medium heat, melt butter and sauté onions and carrots until softened.
  3. Add diced chicken and season with salt, pepper, thyme, and parsley. Cook until chicken is no longer pink (about 5-7 minutes).
  4. Stir in chicken broth and cream; let it bubble before adding peas and potatoes. Mix well.
  5. Place one pie crust in a 9-inch pie plate and fill it with the chicken mixture.
  6. Cover with the second pie crust, sealing edges and cutting slits for steam to escape.
  7. Bake for 30-35 minutes or until golden brown. Cool slightly before serving.
