  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups panko breadcrumbs
  • 1 cup vegetable oil (for frying)
  • ¼ cup low-sodium soy sauce
  • ¼ cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tbsp sugar
  • 1 tbsp mirin (optional)

Instructions

  1. Pound chicken breasts to an even thickness of about half an inch.
  2. Set up three shallow dishes: one with seasoned flour, one with beaten eggs, and one with panko breadcrumbs.
  3. Coat each chicken breast in flour, dip in egg, then press firmly into panko until fully covered.
  4. Heat vegetable oil in a skillet over medium-high heat, fry chicken until golden brown on both sides (4-5 minutes each).
  5. In a bowl, whisk together soy sauce, ketchup, Worcestershire sauce, sugar, and mirin for the sauce.
  6. Serve hot rice topped with crispy katsu slices and drizzle generously with tonkatsu sauce.
