  • 3 tbsp olive tapenade (45g)
  • 2 oz goat cheese, crumbled (56g)
  • 1 cup fresh spinach leaves, washed (30g)
  • 4 cherry tomatoes, sliced (100g)
  • 1 tsp balsamic glaze (optional, 5g)

Instructions

  1. Preheat your oven to 375°F (190°C) if toasting the bread.
  2. Slice the crusty bread into thick slices, about one inch wide.
  3. Generously spread olive tapenade on each slice of bread.
  4. Crumble goat cheese over the tapenade-covered slices.
  5. Layer fresh spinach leaves and sliced cherry tomatoes on top of one slice.
  6. Assemble the sandwich and place it on a baking sheet. Toast in the oven for about 10 minutes until golden brown and crispy.
