Description

Ingredients

  • 1 lb lean ground beef
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 4 garlic cloves, minced
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 28 oz can crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, mix the ground beef, breadcrumbs, egg, garlic, onion, and Italian seasoning until just combined.
  2. In a large pot over medium heat, sauté the carrots and celery in olive oil until softened (about 5 minutes).
  3. Add the crushed tomatoes and chicken broth to the pot; stir to combine.
  4. Season with salt and pepper; let simmer while rolling the meatballs.
  5. Gently drop the meatballs into the simmering broth. Cook for 25-30 minutes until fully cooked.
  6. Serve hot, garnished with fresh parsley.
