- 1/2 cup plain breadcrumbs
- 1 large egg
- 4 garlic cloves, minced

- 2 carrots, diced
- 2 celery stalks, diced
- 28 oz can crushed tomatoes
- 4 cups low-sodium chicken broth
- 2 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large bowl, mix the ground beef, breadcrumbs, egg, garlic, onion, and Italian seasoning until just combined.
- In a large pot over medium heat, sauté the carrots and celery in olive oil until softened (about 5 minutes).
- Add the crushed tomatoes and chicken broth to the pot; stir to combine.
- Season with salt and pepper; let simmer while rolling the meatballs.
- Gently drop the meatballs into the simmering broth. Cook for 25-30 minutes until fully cooked.
- Serve hot, garnished with fresh parsley.
