Ingredients
- Fresh sourdough or rustic bread
- Creamy ricotta cheese
- Sweet cherry tomatoes
- Lightly toasted sesame seeds
- Extra virgin olive oil
- Fresh basil (optional)
Instructions
- Preheat the oven to 400°F (200°C). Slice the bread into thick pieces (about one inch).
- Place the sliced bread on a baking sheet, drizzle with olive oil, and bake for 10 minutes or until golden brown and crispy.
- In a bowl, mix ricotta cheese with a pinch of salt and pepper. Optionally add lemon zest for extra flavor.
- Halve the cherry tomatoes and arrange them on the toasted bread. Drizzle with more olive oil and sprinkle sesame seeds on top.
- Generously dollop the ricotta mixture onto each slice and garnish with fresh basil if desired. Serve immediately.
