Description

Brighten your brunch with this easy Ricotta & Tomato Toast, featuring creamy ricotta, sweet cherry tomatoes, and a sprinkle of sesame seeds for added crunch.


Ingredients

  • Fresh sourdough or rustic bread
  • Creamy ricotta cheese
  • Sweet cherry tomatoes
  • Lightly toasted sesame seeds
  • Extra virgin olive oil
  • Fresh basil (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the bread into thick pieces (about one inch).
  2. Place the sliced bread on a baking sheet, drizzle with olive oil, and bake for 10 minutes or until golden brown and crispy.
  3. In a bowl, mix ricotta cheese with a pinch of salt and pepper. Optionally add lemon zest for extra flavor.
  4. Halve the cherry tomatoes and arrange them on the toasted bread. Drizzle with more olive oil and sprinkle sesame seeds on top.
  5. Generously dollop the ricotta mixture onto each slice and garnish with fresh basil if desired. Serve immediately.
