  • 1 lb large fresh shrimp, peeled and deveined
  • 1 lb Andouille sausage, sliced
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 cup okra, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium chicken broth
  • 2 tablespoons Creole seasoning
  • 2 bay leaves
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, add olive oil and sauté the chopped onion, bell pepper, and celery until tender (about 5 minutes).
  2. Stir in the minced garlic and sliced Andouille sausage; cook until fragrant (around 3 minutes).
  3. Add the diced tomatoes, Creole seasoning, and bay leaves; stir well and simmer for 5 minutes.
  4. Gradually pour in the chicken broth while adding the sliced okra; bring to a gentle boil then reduce heat to low. Simmer for at least 30 minutes.
  5. In the last 5-7 minutes of cooking, add the peeled shrimp until they turn pink and opaque.
  6. Remove from heat and sprinkle with chopped parsley before serving hot.
