- 1 lb large fresh shrimp, peeled and deveined
- 1 lb Andouille sausage, sliced
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 1 cup okra, sliced
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium chicken broth
- 2 tablespoons Creole seasoning
- 2 bay leaves
- Fresh parsley for garnish
Instructions
- In a large pot over medium heat, add olive oil and sauté the chopped onion, bell pepper, and celery until tender (about 5 minutes).
- Stir in the minced garlic and sliced Andouille sausage; cook until fragrant (around 3 minutes).
- Add the diced tomatoes, Creole seasoning, and bay leaves; stir well and simmer for 5 minutes.
- Gradually pour in the chicken broth while adding the sliced okra; bring to a gentle boil then reduce heat to low. Simmer for at least 30 minutes.
- In the last 5-7 minutes of cooking, add the peeled shrimp until they turn pink and opaque.
- Remove from heat and sprinkle with chopped parsley before serving hot.
