Ingredients

  • 1 whole wheat pizza dough
  • 2 cups baby spinach, chopped
  • 1 can (14 oz) marinated artichokes, drained and chopped
  • 1 cup ricotta cheese
  • 1 cup part-skim mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 475°F (245°C). Roll out the whole wheat dough on a floured surface to about 12 inches wide.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped spinach until wilted (about 3 minutes). Add artichokes and heat through.
  3. In a bowl, mix ricotta with oregano, salt, and pepper. Spread the mixture evenly on the rolled-out dough.
  4. Top with sautéed spinach and artichokes, then sprinkle mozzarella and Parmesan cheeses on top.
  5. Bake on a baking sheet for 12-15 minutes until golden brown. Let cool slightly before slicing.
