- 2 lbs bone-in lamb chops
- 4 medium Yukon Gold potatoes, diced
- 3 medium carrots, sliced
- 2 sweet onions, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh thyme (or 1 teaspoon dried)
- 4 cups low-sodium beef broth
- 2 bay leaves
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat. Sear lamb chops until golden brown on all sides.
- Remove lamb and add onions and carrots to the pot. Cook until onions are soft (about 5 minutes).
- Stir in minced garlic and thyme, cooking for an additional minute.
- Pour in beef broth, return lamb to the pot with bay leaves. Bring to a boil, then reduce heat to low and cover.
- Simmer for 1.5 hours or until lamb is fork-tender.
- Add diced potatoes halfway through the cooking time.
