Description

Hearty Irish Lamb Stew is a comforting dish filled with tender lamb and vibrant vegetables, simmered in rich broth for an unforgettable meal perfect for chilly evenings.


Ingredients

  • 2 lbs bone-in lamb chops
  • 4 medium Yukon Gold potatoes, diced
  • 3 medium carrots, sliced
  • 2 sweet onions, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear lamb chops until golden brown on all sides.
  2. Remove lamb and add onions and carrots to the pot. Cook until onions are soft (about 5 minutes).
  3. Stir in minced garlic and thyme, cooking for an additional minute.
  4. Pour in beef broth, return lamb to the pot with bay leaves. Bring to a boil, then reduce heat to low and cover.
  5. Simmer for 1.5 hours or until lamb is fork-tender.
  6. Add diced potatoes halfway through the cooking time.
