Description

Ingredients

  • 2 lbs beef chuck roast
  • 4 large carrots
  • 3 medium potatoes (Yukon Gold or Russet)
  • 2 sweet onions
  • 4 garlic cloves
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 2 bay leaves
  • 2 tbsp Worcestershire sauce
  • Olive oil, salt, and pepper

Instructions

  1. Chop vegetables and cube the beef into bite-sized pieces.
  2. In a large pot over medium-high heat, sear the seasoned beef in olive oil until browned on all sides.
  3. Remove the beef, then sauté onions until translucent; add garlic for an additional minute.
  4. Stir in tomato paste, return beef to the pot, and pour in broth along with Worcestershire sauce. Bring to a simmer.
  5. Add carrots, potatoes, thyme, and bay leaves; cover and simmer for 1.5 hours until tender.
  6. Adjust seasoning to taste before serving.
