- 2 bay leaves
- 2 tbsp Worcestershire sauce
- Olive oil, salt, and pepper
Instructions
- Chop vegetables and cube the beef into bite-sized pieces.
- In a large pot over medium-high heat, sear the seasoned beef in olive oil until browned on all sides.
- Remove the beef, then sauté onions until translucent; add garlic for an additional minute.
- Stir in tomato paste, return beef to the pot, and pour in broth along with Worcestershire sauce. Bring to a simmer.
- Add carrots, potatoes, thyme, and bay leaves; cover and simmer for 1.5 hours until tender.
- Adjust seasoning to taste before serving.
