  • 1 large sweet onion, chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers (mixed colors), chopped
  • 2 sprigs fresh thyme
  • 1 cup carrots, chopped
  • 2 cups chicken stock
  • 3 tbsp low-sodium soy sauce
  • 1 tsp pimento (allspice), ground
  • 1 Scotch bonnet pepper (optional)

Instructions

  1. Prepare your ingredients by chopping the vegetables and marinating the chicken overnight for enhanced flavor.
  2. Heat oil in a large pot over medium heat; brown the chicken pieces skin-side down for about 5 minutes per side.
  3. Remove the chicken and sauté onions, garlic, and bell peppers until fragrant (3-4 minutes).
  4. Return the chicken to the pot; add thyme, pimento, carrots, and soy sauce. Mix well.
  5. Pour in the chicken stock until just covered. Bring to a boil, then reduce heat and simmer for 40-50 minutes until chicken is tender.
