  • 4 lbs leg of lamb (boneless for easier carving)
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 6 garlic cloves, minced
  • 1/4 cup extra virgin olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C). Pat the leg of lamb dry with paper towels.
  2. In a mixing bowl, combine rosemary, thyme, garlic, olive oil, salt, pepper, and lemon juice to create a fragrant paste.
  3. Rub the herb mixture generously all over the leg of lamb and let it sit at room temperature for about 30 minutes.
  4. Place the lamb in a roasting pan and roast for about 20 minutes per pound until it reaches an internal temperature of 135°F (57°C) for medium-rare.
  5. Remove from the oven and allow to rest for 15 minutes before slicing to allow juices to redistribute.
