  • 1 box brownie mix (approximately 18.4 oz)
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 cup Mini Eggs, roughly chopped
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a bowl, mix brownie mix, eggs, and melted butter until combined. Pour into the prepared dish and bake for 20-25 minutes or until a toothpick comes out clean. Let cool completely.
  3. In a mixing bowl, whip heavy cream and powdered sugar until soft peaks form.
  4. Chop the Mini Eggs into pieces.
  5. Crumble the brownies in serving glasses; layer with whipped cream and chopped Mini Eggs. Repeat layers until glasses are full.
  6. Top with additional whipped cream and Mini Eggs before serving.
