- 2 tbsp apricot jam

Instructions
- Preheat your oven to 325°F (160°C). Grease and line an 8-inch round cake pan with parchment paper.
- In a large mixing bowl, beat butter and sugar together until light and fluffy.
- Add eggs one at a time, ensuring each is incorporated before the next.
- In another bowl, sift together flour and baking powder, then fold in mixed spice powder and soaked dried fruits.
- Gradually combine the dry ingredients with the wet mixture without overmixing.
- Pour half of the batter into the prepared pan, add a layer of marzipan, then top with the remaining batter.
- Bake for about 1 hour or until a skewer inserted comes out clean. Allow to cool completely before decorating with apricot jam and marzipan.
