  • 1 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour (sifted)
  • 1 tsp baking powder
  • 2 cups mixed dried fruits (soaked)
  • 2 tsp mixed spice powder
  • 8 oz marzipan
  • 2 tbsp apricot jam
  • Blanched almonds (optional for decoration)

Instructions

  1. Preheat your oven to 325°F (160°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a large mixing bowl, beat butter and sugar together until light and fluffy.
  3. Add eggs one at a time, ensuring each is incorporated before the next.
  4. In another bowl, sift together flour and baking powder, then fold in mixed spice powder and soaked dried fruits.
  5. Gradually combine the dry ingredients with the wet mixture without overmixing.
  6. Pour half of the batter into the prepared pan, add a layer of marzipan, then top with the remaining batter.
  7. Bake for about 1 hour or until a skewer inserted comes out clean. Allow to cool completely before decorating with apricot jam and marzipan.
