Ingredients

  • 4 large Russet potatoes
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons Cajun seasoning
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, sliced
  • ½ cup sour cream or ranch dressing
  • Hot sauce (optional)

Instructions

  1. Wash and peel the potatoes, cutting them into half-inch strips.
  2. Soak potato strips in cold water for at least 30 minutes to remove excess starch.
  3. Drain and pat dry the soaked potatoes. Toss them in olive oil and Cajun seasoning until well coated.
  4. Heat oil in a deep fryer or large pot over medium-high heat. Fry the seasoned potatoes for about 5-7 minutes or until golden brown.
  5. Drain excess oil on paper towels, then layer shredded cheddar cheese on hot fries to melt.
  6. Top with sliced green onions, drizzle with sour cream or ranch dressing, and add hot sauce if desired.
