  • 1 ripe avocado (cubed)
  • 1/4 cup fresh dill (chopped)
  • 1/2 cup red bell pepper (diced)
  • 1/4 cup green onions (sliced)
  • 1/2 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • Salt and pepper to taste
  • 1 tsp Dijon mustard

Instructions

  1. Cook the elbow macaroni in salted boiling water according to package instructions until al dente. Drain and rinse under cold water until completely cooled.
  2. While the pasta cools, chop the red bell pepper and slice the green onions thinly.
  3. In a mixing bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper until smooth.
  4. Gently fold in cubed avocado and chopped dill into the dressing.
  5. Combine the cooled pasta with the veggies and dressing in a large bowl, mixing gently to coat everything evenly.
