Ingredients

  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 tsp mint extract
  • 2 cups powdered sugar (for frosting)
  • Green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan.
  2. In a bowl, whisk together cocoa powder, flour, and a pinch of salt.
  3. Beat softened butter and granulated sugar until creamy. Add eggs one at a time, mixing well after each addition.
  4. Gradually fold in the dry ingredients until just combined.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean.
  6. While cooling, mix powdered sugar, softened butter, mint extract, and food coloring for the frosting. Frost cooled brownies generously.
