  • 4 boneless, skinless chicken breasts
  • 1 cup freshly grated Parmesan cheese
  • 1 cup seasoned breadcrumbs
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 4 cups mixed vegetables (bell peppers, zucchini, carrots)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper.
  3. Coat each chicken breast in the cheese mixture until well-covered.
  4. On a sheet pan, toss mixed vegetables with olive oil, salt, and pepper.
  5. Place coated chicken on top of the vegetables on the sheet pan.
  6. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
