Description

Ingredients

  • 4 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup feta cheese, crumbled
  • 1 sheet puff pastry, thawed
  • 2 cloves garlic, minced
  • 2 large eggs
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, warm the olive oil. Add minced garlic and sauté until fragrant.
  3. Add chopped spinach to the skillet and cook until wilted (about 3-4 minutes). Remove from heat.
  4. In a mixing bowl, combine sautéed spinach, ricotta cheese, crumbled feta, beaten eggs, salt, and pepper. Mix until smooth.
  5. On a floured surface, roll out puff pastry into a rectangle about 1/4 inch thick. Cut into two sections—one larger than the other.
  6. Place the larger section in a greased pie dish and fill with the spinach mixture. Cover with the smaller pastry section and seal edges.
  7. Brush the top with an egg wash (beaten egg mixed with water) for a golden finish.
  8. Bake for 25-30 minutes or until the crust is golden brown.
