- 4 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup feta cheese, crumbled
- 1 sheet puff pastry, thawed
- 2 cloves garlic, minced
- 2 large eggs
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, warm the olive oil. Add minced garlic and sauté until fragrant.
- Add chopped spinach to the skillet and cook until wilted (about 3-4 minutes). Remove from heat.
- In a mixing bowl, combine sautéed spinach, ricotta cheese, crumbled feta, beaten eggs, salt, and pepper. Mix until smooth.
- On a floured surface, roll out puff pastry into a rectangle about 1/4 inch thick. Cut into two sections—one larger than the other.
- Place the larger section in a greased pie dish and fill with the spinach mixture. Cover with the smaller pastry section and seal edges.
- Brush the top with an egg wash (beaten egg mixed with water) for a golden finish.
- Bake for 25-30 minutes or until the crust is golden brown.
