Description

Easy Zucchini Cornbread Casserole is a delightful blend of fluffy cornbread, tender zucchini, and melted cheese, perfect for family dinners or gatherings.


Ingredients

  • 1 cup sweet corn (fresh or frozen)
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 cup shredded sharp cheddar cheese
  • 2 large eggs
  • 1 cup whole milk
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, mix cornmeal, flour, baking powder, sugar, salt, and pepper.
  3. Add eggs and milk; stir until just combined.
  4. Gently fold in zucchini, corn, and cheddar cheese until evenly mixed.
  5. Pour mixture into the prepared dish and bake for 35-40 minutes until golden brown and a toothpick comes out clean.
  6. Allow to cool slightly before slicing into squares; serve warm.
